The festive spirit is in full swing now in the Almost Apricot house: presents are bought and pretty much all wrapped and the countdown to our Christmas holiday has begun, but it can’t be Christmas without the smell of apple spiced candles in the air or the flavour of gingerbread, whether you like a Christmas latte or the classic choice of gingerbread itself. Therefore the perfect recipe for this time of year is of course gingerbread men!
It’s a really easy recipe so it’s perfect to make with little ones or as a quick Christmas treat.
What you need:
350g plain flour
175g light soft brown sugar
2 tsp ground ginger
1 tsp bicarbonate soda
4 tbsp golden syrup
Writing icing to decorate
In a bowl, mix together the flour, ginger, cinnamon and bicarbonate of soda. Add the butter and incorporate well until it looks like breadcrumbs and then mix in the sugar.
In another bowl, mix together the beaten egg and golden syrup and then add it to the mixture. Mix it all together until the dough clumps together.
Knead the dough gently and then wrap in cling film and leave to chill in the fridge for 15 minutes.
Preheat your oven to 180 degrees and line your baking trays with baking paper.
Lightly flour your surface and then roll our your dough to about half a centimeter thick. Using your gingerbread man cutters, cut out your shapes and place on your baking trays. Make sure you keep them a good distance apart as they will expand.
Bake your gingerbread men for 12-15 minutes until they’re golden brown. Leave them to cool on the tray for a while and then transfer them to a cooling rack.
Once they’re cooled, decorate!
